Parts of the UK are in the clutches of a heatwave right now, with the Met Office having released a health alert for warm weather until the early hours of Wednesday. Because of this, it's vital to keep cool - and there's no better way to do this than with ice cream.
This cool frozen treat tastes even better when it's warm and sunny outside. And although you can buy special ice cream makers if you want to create your own flavours at home, you actually don't need any fancy equipment to whip up a batch. According to one recipe creator on TikTok, you can make a refreshing lemon variety using as little as two ingredients.
The Caketoonist, who has more than 406k followers on TikTok, says you can make a delicious dessert without investing in an ice cream maker or any other fancy equipment.
The light, lemony flavour is perfect for enjoying during this warm weather, but you can customise it with whatever other flavours or additions that you'd like.
All you need for this recipe is lemon curd and custard, with the option to add in a squeeze of fresh lemon juice 'for more bite'. It takes a couple of hours to come together, but most of the prep work can be done overnight so there's minimal work to do when you actually want to eat it.
Here's everything you need to know if you want to make your own lemon ice cream.
Ingredients
- 250g lemon curd
- 500g custard
- Juice of one lemon (optional)
Method
Put the lemon curd into a large bowl and add the lemon juice, if using. Give it a good stir to combine. Then, gradually add in the custard a small amount at a time, stirring well until you've got a nice, creamy mixture.
Line a shallow baking tin with greaseproof paper and pour in the mixture. Freeze for around three hours, or you can leave it overnight.
When you've taken it out the freezer, break the solid custard into pieces. Add to a food processor and start blitzing. The chef said: "Because this was really frozen solid, it first broke down into a powdery state. But just keep blitzing and scraping, and it will come back together to a recognisable soft ice cream consistency."
You can either eat it right away, or transfer into a container, swirl through some more lemon curd, and freeze for a little while longer to firm it up.
