Ingredients400g cod (or any other firm mild white fish), cut into 4 strips

Freshly ground black pepper
1/2 cup all-purpose flour
One large egg
Two cups panko breadcrumbs
One tsp Old Bay seasoning (or substitute)
Paper towels
Lemon wedges and tartar sauce, for serving
Pat the fish dry on both sides with paper towels and season it with salt and pepper
Put your flour in a shallow bowl then beat the egg into another shallow bowl. In the third bowl, put your panko bread crumbs. Season the panko with the Old Bay, then dip the fish into the flour, then the egg and finally the panko, pressing it to coat it.
In batches, put your fish in the air fryer and cook it at 205C for 10 to 12 minutes, making sure to gently turn the fish halfway through the cook time.
Serve fresh with lemon wedges and tartare sauce.
