Glowing embers of ancient kitchens rose the soul-warming Aattu Kal Saaaru to revive the weary; the gentle, earthy comfort of Keerai Masiyal for the farmers after a long day in the fields; and the royal splendour of Madras Vadai Curry for the feasts of chieftains. Centuries passed, empires rose and fell, yet these recipes endured—whispered from grandmother to grandchild, preserved in the memory of the land.
This August, the fires are lit once more. From 15th to 24th August 2025, Madras Kitchen Company at The Westin Chennai Velachery unveils The Madras Revival—a rare banquet where the flavours of ancient Tamilakam are reborn.
Crafted with time-honoured methods and the finest local ingredients, each dish tells a story: Vazhapoo Vadai with Aamu Kallu Chutney, Keerai Masiyal with Ragi Kali, the grand Madras Vadai Curry, and the sweet embrace of Inji Kali and Karuppatti Halwa.
