Red chilli powder – 1/4 tsp
Ajwain – 1/4 tsp
Green chilli chopped – 1 tsp
Chopped coriander leaves – 1 tbsp

Method
- First of all, take good quality brinjals and cut them into round slices.

- After this, whisk the batter well so that all the lumps can be eliminated.
- After this, add ajwain, finely chopped green chili, red chili powder, green coriander leaves, crushed ginger, and salt to the gram flour batter and mix everything.
- Now put oil in a pan and heat it on medium flame. When the oil is hot, take the brinjal slices dip them in the gram flour batter, and put them in the pan for deep frying.
- If you want, you can dip 8-10 slices of brinjal in gram flour together. Now put the brinjal pakoras for frying according to the capacity of the pan and fry for some time.

- After this, flip the pakoras and fry from the other side. Fry the pakoras until they become golden on both sides.
- After this, take out the brinjal pakoras on a plate. Similarly, prepare brinjal pakoras with all the brinjal slices and batter.
